Chocolate Self-Saucing Pudding

1 cup self-raising flour
2 tbsp baking cocoa
2/3 cup caster sugar
30g butter, melted
½ cup skim milk
Method

1. Preheat oven to 180°C.

2. Sift flour and baking cocoa into a large bowl, stir in sugar and make a well in the centre.

3. Whisk butter and milk together and pour onto dry ingredients. Stir gently until just combined.

4. Spread pudding mix into an 8-cup capacity baking dish.

5. To make the sauce, combine the baking cocoa and brown sugar together in a small bowl and then sprinkle over the pudding mixture. Gently pour the boiling water over the top. Bake in oven for 40 minutes or until a skewer comes out clean when inserted into the pudding, not through to the sauce at the bottom.

6. Serve with low-fat custard or low-fat ice cream.

 
Notes

HINT: To microwave this pudding use a round dish and cook on HIGH for 10 minutes. Test and if not ready cook for a further 2 minutes.
